  1. To make a stuffed cabbage soup, you'll first need to prepare the cabbage. Cut off the ends of the stalks of cabbage and cut them in half lengthwise. Place the sliced cabbage on the cutting board. Scoop out the seeds from the stems and chop them into small pieces. Toss the chopped cabbage with the salt and pepper. Add the vegetable stock and bring to boil. Reduce the heat to low and simmer until the vegetables are tender, about 30 minutes. Remove from heat and stir in the remaining ingredients. Serve with sour cream, if desired.
