  1. To prepare a stuffed pepper soup recipe, first cut the peppers in half lengthwise. Then cut each half into quarters. Place the quartered pepper halves, cut side down, in the bottom of the crock pot. Cover with water and bring to boil. Reduce the heat to low and simmer for 1 hour. Remove the pot from the stove and add the chopped onion. Cook until the onion is translucent, about 5 minutes. Add the tomato paste and cook, stirring, until it is thickened, 2 to 3 minutes more. Pour the soup into jars and refrigerate until you are ready to serve.
