To prepare a successful green chili stew stews recipe, you'll need: Green chilies. You can use any kind of chili you like, but I like to use red, green, yellow, and white. If you don't have red chili, use green peppers or green onions. Heat the olive oil over medium-high heat. Add the onion and cook until softened, about 5 minutes. Stir in the chili powder, cumin, oregano, paprika, salt and pepper. Cook, stirring occasionally, until the onions are lightly browned and the mixture is heated through. Remove the pan from the heat and add the tomatoes, tomato paste, water and salt. Simmer, covered, for 1 hour. Serve with tortillas and sour cream.
