  1. To prepare a sugar snap peas with mint recipe, first cut the snap beans in half lengthwise and remove the seeds. Cut the stems off. Peel the mint leaves and cut them into 12 inch slices. Place the halved snap and mint slices in the bottom of an 8 x 8-inch baking dish. Pour the boiling water into the pot and bring the mixture to boil. Reduce the heat to medium-low and simmer for 20 minutes. Remove the pan from heat and stir in 1/4 cup each chopped mint and thyme. Serve immediately.
