Preheat the oven to 375 ?F (191 oC) and grease and flour two 9-inch (23.25 cm) round cake pans. Line the bottom of each pan with parchment paper and set aside. Using an electric mixer, beat the butter and sugar on medium speed until light and fluffy, about 2 minutes. Gradually beat in the vanilla. Beat the egg whites until stiff peaks form. Add the flour and mix just until combined. Pour the batter into the greased pan and bake for 12 to 15 minutes or until the top is golden brown. Remove the pan from the heat and allow the cake to cool completely.
