  1. In a large saucepan, heat the olive oil over medium-high heat. Add the onion and cook, stirring frequently, until the onions are translucent, about 5 minutes. Stir in the rice, salt and pepper to taste. Bring the mixture to boil, then reduce the heat to low and cover the saucepan. Simmer, covered, for 20 minutes, or until rice is tender. Serve the scampi rice immediately.
