Steps

1. Place sweet potatoes in a large casserole dish. Add sausage and cook over medium-high heat, stirring occasionally, until sausage is no longer pink and potatoes are tender, 30 to 40 minutes. Remove from heat and stir in apple sauce, sour cream, and salt and pepper to taste. Bake in the oven at 350? for 1 hour and 15 minutes, or until heated through. Serve warm.
