1. Melt butter in a large skillet over medium heat. Add sweet potatoes and cook, stirring frequently, until tender, about 30 minutes. Stir in pineapple. Cook and stir until heated through, 2 to 3 minutes more. Pour into prepared casserole dish and bake, uncovered, at 350? for 35 to 40 minutes or until browned. Let stand 5 minutes before serving.
