Steps

1. Melt the butter in a large skillet over medium heat. Add the flour and cook, whisking constantly, until the mixture is light and fluffy, about 5 minutes. Stir in the milk and continue cooking until thickened, 2 to 3 minutes more. Remove the skillet from the heat and add the sweetbreads.
