Steps
In a large soup pot, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring frequently, until the onions are translucent, about 5 minutes. Stir in the tomatoes, tomato paste, chili powder, cumin, oregano, salt, and pepper. Cook, whisking, 2 to 3 minutes more. Remove from the heat and add the tomato mixture to the pot along with the remaining ingredients. Simmer, uncovered, 5 to 10 minutes or until heated through. Serve with tortilla chips.
