Steps

  1. To prepare a turkey meatballs without eggs recipe, you will need: 1 pound ground turkey 2 tbsp. kosher salt 1 cup melted butter 1 tablespoon thyme 2 tablespoons paprika 1 teaspoon ground black pepper 2 teaspoons ground nutmeg 14 teaspoon each ground cumin and fennel seeds 1/2 cup chopped parsley 1 1/2 cups shredded parmesan cheese 1 chopped scallions 1/2 teaspoon dried oregano, if desired 2 cups diced red bell peppers, finely chopped, 1/4 cup each chopped celery, onion, garlic, salt, pepper, and pepper to taste 2 eggs, uncooked. To cook the turkey, heat the olive oil over medium-high heat. Add the sliced turkey and cook, stirring occasionally, until no longer pink in the center, about 5 minutes. Remove from the heat and set aside to cool. Meanwhile, combine the remaining ingredients. Form the mixture into 1-inch (2.5 cm) balls. Roll each ball in feta cheese, then roll in bread crumbs. Place the balls in an oiled 9 x 13-inch baking dish. Bake for 20 minutes or until the tops are golden brown and the inside is firm to the touch. Serve warm or at room temperature. Makes 4 servings.
