  1. To prepare a turkey posole recipe, you'll need: 1 pound ground turkey, 2 tbsp. kosher salt, 1/2 cup chopped thyme, 1/4 cup dried or fresh oregano, 1 1/2 cups chopped parsley, 3 tablespoons olive oil, salt and pepper to taste. Preheat the oven to 375 degrees F (190 degrees C). Cut the turkey into 1-inch (2.5 cm) thick slices. Place the slices in the bottom of an 8-inch (20-centimeter) oven-proof skillet. Heat the oil over medium-high heat. Add the diced turkey to the skillet and cook, stirring occasionally, until the meat is no longer pink, about 5 minutes. Remove the pan from the heat and add the remaining ingredients. Cook, tossing, for 2 to 3 minutes, or until heated through. Serve with sour cream, if desired.
