In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the turkey and cook, stirring occasionally, until browned on both sides, 5 to 7 minutes. Stir in 2 tablespoons sour cream, 1 teaspoon paprika, and 1/4 teaspoon cayenne pepper. Cook, tossing, 2 to 3 minutes or until heated through. Serve with tortilla chips.
