To prepare a two bean soup, add the following ingredients to the pot: 1 chopped onion 2 chopped celery 3 chopped garlic 4 chopped parsley 5 chopped thyme 6 chopped coriander 7 chopped green chilies 8 chopped red bell peppers 1/2 cup chopped fresh cilantro 1 cup diced tomatoes 1 tablespoon dried oregano 1 teaspoon kosher salt 1 tsp. ground cumin 2 tablespoons dried paprika 2 teaspoons ground black pepper 2 cups water 1 1/2 cups shredded cooked quinoa 12 cup frozen peas Instructions: Preheat the oven to 375 degrees F. Wash the beans and place them in the soup pot. Add the remaining ingredients and bring to boil. Reduce the heat to low and simmer until the vegetables are tender, about 20 minutes. Remove from heat and let cool. Serve in bowls with sour cream and guacamole. Makes 4 servings.
