  1. In a large, heavy-bottomed saucepan, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring frequently, until the onions are translucent, about 5 minutes. Stir in the tomato paste and simmer, uncovered, for 30 minutes or until thickened. Remove the pan from the heat and add the stock, salt and pepper to taste. Bring the mixture to boil, then cover the saucepan with cling film and allow it to simmer for 1 hour. Serve the paella immediately.
