Place the broccoli and mushrooms in the skillet and cook until just tender, about 5 minutes. Remove from the heat and set aside. In the same skillet, heat the remaining tablespoon of oil. Add the onion and garlic and saute until the onions are translucent, 2 to 3 minutes, then add the mushrooms and broccoli. Cook, stirring occasionally, until vegetables are heated through, 3 to 4 minutes more. Pour the mixture into the tortillas and top with cheese. Bake, uncovered, at 400 degrees F for 20 to 25 minutes or until cheese is bubbly and topping is golden brown. Serve with guacamole.
