  1. To prepare a unstuffed bell peppers recipe, you will first need to remove the seeds from the inside of the pepper. Cut off the top and bottom of each pepper, and then cut the stems off. You will also want to cut off any excess skin that is on the seed. Peel the skin off of one pepper and cut it in half lengthwise. Place the cut pepper halves in the crock pot and cover with water. Bring the water to boil, then reduce the heat to medium-low and simmer for 20 minutes. Remove the pot from heat and add the chopped onion. Cook until the onion is translucent, about 5 minutes, stirring frequently. Add the salt and pepper to taste. Simmer the onions until they are soft, but not mushy, for about 10 minutes more. Serve with sour cream and guacamole.
