First, you'll need the following ingredients: 14 cup (60 mL) jarred tomato sauce 1 tablespoon (2.5 g) dried oregano 1 tbsp. dried paprika 1 chopped red bell pepper 2 tablespoons dried chili powder (optional) 1 1/2 cups (240 milliliters) vegetable broth 1 teaspoon (0.5 grams) ground cumin 1/2 teaspoon ground coriander 1/2 cup chopped parsley 1 cup diced jalapeos, scallions, cilantro, and salt and pepper to taste. Heat the olive oil over medium-high heat. Add the onion and garlic and cook until the onions are translucent, about 5 minutes. Stir in the tomato paste. Cook the mixture for 1 minute, then add the tomatoes and simmer until they're reduced by half. Remove the pan from the heat and stir in half of the cilantro. Pour the remaining cilantro mixture into the pot and bring to the boil. Simmer the chili for 10 to 15 minutes, or until it's thickened, stirring occasionally. Serve with tortilla chips and guacamole.
