  1. To prepare the vegetable kurma, you'll need: 14 cup (60 ml) vegetable oil, 1 pound (450 g) chopped onion, 2 tbsp. kosher salt, and 1 chopped garlic clove. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring frequently, until the onions are translucent, about 5 minutes. Stir in the tomato paste and 2 tablespoons of water. Reduce the heat to medium and simmer the mixture, covered, for 1 hour. Remove the skillet from heat and add the tomatoes and cilantro. Season with salt and pepper to taste. Serve with tortilla chips.
