  1. In a large, heavy-bottomed saucepan, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring frequently, until softened, about 5 minutes. Stir in the rice and salt and pepper to taste. Cover the saucepan and simmer, uncovered, for 20 minutes or until tender. Remove the pan from the heat and stir in 1 cup of the Parmesan cheese. Serve with the vegetable paella.
