  1. To prepare a veggie packed chicken fried rice recipe, you'll first need to prepare your chicken. Wash and dry the chicken, and cut it into bite-sized pieces. Place the pieces of chicken in the crock-pot and cover with water. Bring the water to boil, then reduce the heat to medium-low and simmer for 20 minutes, stirring occasionally. Remove the pot from the stove and add the vegetable oil. Saute the vegetables until they're tender, about 5 minutes. Add the rice and cook until it's al dente, but not mushy, 10 to 15 minutes more. Serve with sour cream, if desired.
