(2 kg) ground beef, 1/2 cup (120 ml) brown sugar, 1 teaspoon each ground cumin and kosher salt, and ground black pepper. In a large skillet, heat the olive oil over medium-high heat. Add the cut of meat and cook, turning occasionally, until browned on all sides, about 5 minutes. Remove from the heat and set aside to rest for 10 minutes, then shred with two forks. Toss with the chopped parsley and season with salt and pepper to taste. Serve with sourdough bread.
