To prepare a whipped horseradish sauce, combine the following ingredients: 1 cup (240 milliliters) warm water 1 tablespoon (2.5 ml) kosher salt 1 teaspoon (0.5 g) freshly ground black pepper 2 tablespoons (60 sifted) coarsely chopped fresh thyme (optional) 2 teaspoons freshly grated nutmeg 1 tsp. ground paprika 14 teaspoon (1 gram) ground allspice 1/8 teaspoon ground cloves Instructions: Heat the water to boiling, then reduce the heat to medium-low and simmer the mixture for 5 minutes. Remove the saucepan from heat and stir in 2 cups (450 grams) of chopped toasted pine nuts. Allow the nuts to cool to room temperature. Pour the cooled mixture into jars and store in an airtight container in the refrigerator for up to 3 months.
