Fill a large bowl with warm water. Add the yeast to the water and mix until frothy. Pour the kneading mixture into the dry ingredients and stir to combine. Set aside to rise until doubled in size, about 1 hour. Preheat the oven to 375 degrees F (190 degrees C). Grease and flour two large loaf pans and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy. Gradually add the flour mixture and beat on medium speed until the mixture resembles coarse breadcrumbs. Sift in the salt and vanilla extract. Turn the mixer to low speed and add in 1 tablespoon of the oil. Mix on high speed for 1 minute. Scrape the sides and bottom of each pan with your hands. Bake the bread for 12 to 15 minutes or until golden brown. Allow to cool before slicing. Serve warm or at room temperature.
