  1. To prepare a zucchini feta casserole recipe, you'll need: Zucchini, Feta, Parmesan Cheese, Tomatoes, Red Wine Vinegar, Olive Oil, Salt, and Pepper. Preheat the oven to 375 degrees F (190 degrees C). Cut the zucchini in half lengthwise and scoop out the seeds. Cut each half into 1/4-inch cubes. Place the cubed zucchini on the bottom of the prepared casserole dish. Pour the olive oil, red wine vinegar, salt and pepper over the mixture. Bake the casserole for 35 to 40 minutes or until the cheese is melted and bubbly. Serve warm.
