  1. To make a zucchini lasagne with beef, you'll need: Zucchini. You can use any type of zucchini, as long as it's not mushy. If you don't want to use mash, just puree the zucchini and add it to the meat mixture. Cook the mixture on medium-high heat, stirring occasionally, until the beef is no longer pink in the center. Remove the pan from the heat and stir in 2 tablespoons of the ricotta cheese, 1 tablespoon of parmesan cheese and 1/4 teaspoon of kosher salt. Season with salt and pepper to taste.
