  1. To make zucchini waffles green, you'll need: Zucchini. You can use any type of zucchini you like, but I like to use yellow zucchini. If you don't like yellow, use a different type. I used green zucchini because it's the color I wanted. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease two 9x9-inch baking pans with non-stick cooking spray and set aside. Place the zucchini in the pan and cook until it starts to turn golden brown, about 5 minutes. Remove it from the heat and allow it to cool to room temperature. Cut it into bite-sized pieces and add them to the prepared pan. Bake for 12 to 15 minutes or until the edges are brown and the center is set. Serve warm with your favorite toppings.
