Place the skin side down on the boneless chicken breast. Season both sides with salt and pepper. Heat the oil over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the ginger-garlic paste, turmeric, cumin, coriander powder, fenugreek seeds and salt. Cook, stirring frequently, until the onions are lightly browned, 2 to 3 minutes, then add the sliced chicken to the pan and stir to coat it with the spices. Reduce the heat to low, cover and simmer for 30 minutes or until chicken is no longer pink inside. Remove from heat and let stand for 10 minutes before slicing into bite-sized pieces. Serve with rice or naan.
