  1. To prepare a stuffed eggplant recipe, cut the eggplant in half lengthwise and scoop out the seeds. Place the cut eggplant halves in the bottom of an ungreased 9 x 13-inch baking dish. Fill each half with about 2 tablespoons of the filling. Bake for 20 to 25 minutes or until eggplant is tender. Remove from oven and allow to cool.
