  1. Preheat the oven to 450 degrees F (232 degrees C). Place the pork in a roasting pan and cook it for 2 to 3 hours or until it is no longer pink in the middle. Remove it from the heat and let it rest for 5 to 10 minutes. Meanwhile, chop the onions and garlic and add them to the pan. Add the green chilies and stir-fry them for 1 to 2 minutes, until they are soft. Then add the tomatoes, chili powder, cumin, coriander, and salt. Cook the vegetables for 3 to 5 minutes until the liquid is reduced by half. Serve the hot and spicy pork and vegetables with rice.
