To make venison summer sausage, you'll need: 1 pound (240 g) veal, 2 lb (60 oz) ground beef, 1/2 cup (120 ml) brown sugar, 1 teaspoon each ground cinnamon and ground nutmeg, and a pinch of kosher salt. Place all ingredients in large, heavy-bottomed pot. Bring to boil over medium-high heat. Reduce heat to medium and simmer until meat is no longer pink, 20 to 30 minutes. Remove from heat and let stand 5 minutes, then shred with two forks.
