Steps

  1. To prepare a white truffles recipe, you will first need to prepare your ingredients. You will need: White Truffles: Preheat your oven to 375 degrees F (190 degrees C) and prepare the ingredients as you would for any other type of truffle. Place the pistachios, slivered almonds and pecans in the bottom of an oven safe dish. Pour the olive oil into the dish and heat it over medium-high heat until it is shimmering. Remove the pan from the heat and add the salt and pepper to taste. Allow the mixture to cook for about 5 minutes, stirring frequently, until the sugar has dissolved and the nuts are lightly browned. Set aside to cool. To make the truffle ganache, combine the white chocolate chips, confectioners' sugar, and melted butter in another bowl. Add the egg yolks to the chocolate mixture and beat them with an electric mixer until they are light and fluffy, about 1 to 2 minutes. Gradually stir in 1 tablespoon (15 ml) of the milk, then beat in 2 tablespoons (14 g) each of vanilla extract and orange zest. Spread the vanilla mixture evenly over the top of each truffle, pressing down firmly with your hands. Chill until set, at least 1 hour. If you are making more than one batch, store them in an airtight container at room temperature until you're ready to use them.
